Introducing: Box to table
We have all heard of farm to table. Now we have box to table. Why do this at all when you can go to the store and buy fresh veggies by the armful. Well, I can think of two reasons: poison and nutrients.
In 1942 Adelle Davis wrote a book on nutrition critical of the american diet. Unfortunately, her peers were critical of her. She advocated things like; whole grains, more veggies, less sugar, vitamin supplements, exercise. Seemingly what we hear today, but don’t listen too because, well we all want to lose weight.
Getting to the point of Adelle Davis and all her knowledge of the nutritional value of foods, the one thing that sticks in my mind the most is that when calculating the vitamin content of an orange, we need to say “what orange grown where”.
So why the box?
That, in the middle of winter, when we all head to the store to buy our “healthy” greens, we need to not only ask where is was grown, but HOW it was grown, and what’s keeping it looking so fresh.
If you have ever gardened, you have probably used pesticides, even organics can have ill effects on our health.
So why the box, well, no pesticides. No pesticides, not growth or mold inhibitors, no preservatives. When you grow your own, you know EXACTLY where is was grown and HOW it was grown.
